Our story

 

 

Amsterdam Pâtisserie was born in 2023, created by French couple Nicolas and Marine. After moving to Amsterdam together in 2019, we quickly fell in love with the city, especially its food scene. But over time, we found ourselves missing the nostalgic desserts of our childhoods: chocolate religieuses, lemon tarts, Paris-Brest, and the little pastries shared at family gatherings.

Marine’s love for baking began at the age of 14 alongside her grandmother, learning to make Paris-Brest and choux pastry. Nicolas discovered his passion for cooking later on, finding in the kitchen an exciting new territory to explore.

Our approach to pâtisserie has never been about excessive sophistication or reinventing everything. We want to recreate the generous, indulgent flavours we remember: orange blossom, sweet vanilla, caramel, chocolate and rum ; the flavours of traditional French pâtisseries and village bakeries, brought to Amsterdam.

What started in 2023 as Amsterdam Pâtisserie, from our small production kitchen in De Pijp, gradually grew into something much bigger than we had imagined.

In 2026, as we prepare to open the doors of our very first pâtisserie at Ceintuurbaan 224H, we felt it was time for our name to grow with us.

Amsterdam Pâtisserie becomes Diplomate.

The name felt particularly meaningful to us. Crème diplomate, pastry cream lightened with whipped cream, is one of our favourite creams in French pâtisserie and one we use again and again in our creations. But Diplomate is also the name of a traditional regional French cake that was Marine’s great-grandmother’s favourite, giving the name a very personal connection to the generations and memories that inspired us to bake in the first place.

And there is another meaning we love. A diplomat represents their culture beyond its borders. In our own, much sweeter way, that is what we hope to do here: share a little piece of French pâtisserie culture in the country we now call home.

So while the name is changing, the heart of what we do remains exactly the same: recipes rooted in memory, generous French pâtisserie, and the pleasure of sharing it with others.
